The best Victoria sponge cake recipe with buttercream filling frosting or icing and mixed fruit jam topping.
Victoria Sponge cake Recipe
150 gms self raising flour, 150 gms Butter, 150 gms Castor Sugar, 3 Eggs. 1/2 Tsp Vanilla essence.
Mix Butter and Sugar.
Beat it till its creamy.
whisk the eggs.
Mix the beaten egg slowly to the mixture and beat it.
Mix Vanilla essence to the mixture.
Add Spoons full of flour and fold in gently.
Keep mixing to form the smooth batter.
Take 2 Baking Tins of 6 inch each, prepare the tins by putting some oil and brush it around,dust the tins using flour.
Put the batter in baking tins.
Spread the batter evenly.
Bake at 160 Degree C for 40 minutes.
Ingredients for Buttercream frosting or Icing :
150 gms soft Butter and 200 gms Icing sugar.
Mix Butter and Sugar and beat it till its creamy.
Buttercream Frosting or Icing is ready.
Take some Mix Fruit Jam and whisk it.
Unmold the Victoria Sponge once cool.
Dress the Victoria Sponge cake with Buttercream icing.
Spread the buttercream Icing or Frosting on the Victoria sponge.
Pour the Mixed fruit jam over it.
Spread the jam all over.
Place the second Victoria sponge over it.
Use the round Piping tip with Buttercream frosting and pipe it around.you can use any other tip too.
Pour the mixed fruit Jam on top.
Spread the jam and Victoria sponge cake is now ready.
