Here is How to make moist easy simple homemade Chocolate Victoria sponge cake recipe with cocoa powder from scratch with few ingredients.
Chocolate Victoria Sponge Cake Recipe
2 1/2 Cup All purpose Flour, 2 Cup Castor Sugar, 1 Cup Buttermilk, 1 Cup oil, 3 eggs, 1 cup Hot water, 2 Tbsp Baking Soda, 1/2 Cup Cocoa Powder, 1 tsp Coffee Powder, 2 Tsp Baking Powder.
Mix hot water, Coffee powder and Cocoa powder in a bowl.
Take another bowl and mix Castor sugar and eggs.
Whisk Sugar and eggs well.
In a clean and dry bowl pour the coffee cocoa mixture.
Add sugar and egg mixture to it too.
Now add the remaining ingredients like All purpose flour, baking powder and baking soda and whisk it well.
Add Oil and buttermilk.whisk it well till all the ingredients come together and form a smooth shiny batter.
Chocolate Victoria sponge cake batter is ready.
Take two 9 inch round baking tins, prepare them by putting oil and brush them around, Dust the tins with some flour.
Divide the Chocolate Victoria sponge cake batter in 2 molds and bake them at 180 degree c for 40 Minutes.
Ingredients for Chocolate Buttercream icing or Frosting :
1 Cup Icing Sugar, 1 Tsp Coffee powder, 1/2 cup Cocoa Powder, 3/4 Cup Butter.
Beat Icing Sugar and Butter till it becomes smooth and creamy.
As shown Below.
Add Coffee powder and Cocoa Powder to it.
Beat the mixture well into a stiff icing.
The Chocolate Victoria sponge cakes are baked.
Unmold once cool.
Put the Chocolate Buttercream icing or frosting in a piping bag with round tip or any other of your choice, if you don't have a nozzle or tip just trim the tip of the piping bag.
Your Piping bag is ready to dress the Chocolate Victoria sponge cake.
Pipe it around the rim of the chocolate sponge as shown.
Add 2 Tablespoon Milk to the remaining Chocolate buttercream frosting to make thin paste.
Mix it well to get a homogeneous mixture.
Pour the Chocolate buttercream frosting thin paste in the center of your chocolate Victoria sponge cake.
Ingredients for Chocolate topping :
100 gms Icing Sugar, 2 Tbsp Milk, 1/4 cup Cocoa Powder, 50 gms butter.
Mix all the ingredients.
Beat all the ingredients together into a fine paste.
As the topping is stiff, Add an extra 1 Tbsp Milk and beat it again.
Fine Chocolate topping is ready.
Place the second Chocolate Sponge on top.
Spread the Chocolate topping on top.
Your Chocolate Victoria Sponge cake is ready.
