Simple easy homemade and moist Carrot Victoria cake with cream cheese frosting or icing recipe from scratch with few ingredients.
Carrot Victoria cake with cream cheese frosting icing Recipe
1 1/2 Cup Grated Carrots, 1/2 cup oil, 2 Eggs, 100 gms Castor sugar, 1/2 Tsp cinnamon powder, 1/4 Tsp Baking soda, 85 gms All purpose flour, 1 Tsp baking powder.
Mix Eggs,Baking powder,Baking Soda,Castor Sugar and Cinnamon Powder and whisk it.
Add Oil gradually.
Whisk it well.
Add the Grated carrots to the all purpose flour in a separate bowl.
Mix it gently so that the grated carrots are coated well with all purpose flour.
Mix both the mixtures.
Whisk them well to get a smooth batter.
The Carrot Victoria cake batter is ready.
Prepare two baking tins of 6 inch each, Brush with oil and dust them with flour.
Divide the batter between the 2 tins.
Add chopped Almonds or any other nuts of your choice to one of the tins. Bake at 160 Degree C for 35 minutes.
Ingredients for Cream Cheese Frosting or Icing
25 gms Butter, 60 gms Cream Cheese, 150 gms Icing Sugar.
Take butter and cream cheese in a bowl.
Beat the cream cheese and butter till its creamy.
Gradually add icing sugar.Leave some icing sugar for dusting.
Refrigerate the cream cheese frosting icing for an hour before using it.
Unmold the Carrot Victoria cakes once cool.
Place the plain Carrot Victoria sponge.
Spread the Cream cheese frosting or Icing on carrot cake sponge.
Dress the Carrot cake sponge well with cream cheese frosting or icing.
Place the other carrot cake sponge on it.
Dust the top with remaining icing sugar.
